I’m not a huge fan of tacos. I’m a big believer in the idea of volumetrics—the idea that if you bulk up your meal with healthy ingredients like veggies, it’s going to be more filling and satisfying, even if you aren’t necessarily eating more calories. It’s why I love bowl-style meals, because you can keep adding and mixing things in. Now, all that being said, these tacos are the exception. The sauce is so rich and flavorful that you want to eat slowly, savoring every bite, so by the time you finish to taco number three, you’ve had more than enough. Continue reading

Spicy Chicken Enchiladas
I’m not going to sugarcoat it: Enchiladas can be a pain in the neck to make. For that reason, they tend to fall in the category of food I often order in restaurants, but don’t make too frequently. However, when I came across a recipe for classic chicken enchiladas in my favorite slow cooker cookbook, I thought I’d give it a shot. It seemed like cooking the chicken in the slow cooker would at least make the process feel like less work since it was spread out over more hours. And it did! Continue reading
Slow Cooker BBQ Chicken and Brussels Sprouts Slaw
In addition to cooking more in general and trying new recipes, I’m also trying to experiment more with toss-together dinners that I come up with on my own based on what we might have lying around. This barbecue chicken and slaw was incredibly easy and had maybe 10 minutes of active prep time, none of which needed to be done right before serving. Continue reading
Simple Chicken Mole
I love mole. It’s probably my favorite thing to order at Mexican restaurants. I know that mole technically just means sauce, but I’m talking about the rich, creamy version made with things like cocoa powder, cinnamon, tomatoes, star anise, peanut butter and about 10 other things. Because it tends to have so many ingredients, I’ve shied away from making it at home in the past. Enter my new favorite cookbook, The Complete Slow Cooker, where Jeff found a slow cooker chicken mole made with only seven ingredients! Continue reading
Cooking Dinner at 8am
One of the things I’m most excited about with my new lifestyle is being able to cook more in general, as well as experiment with different cooking methods and ingredients. I really enjoy cooking, but Jeff had that job covered for the past few months, and getting home from work at 6:30, then working out, then making dinner was not the greatest schedule. No longer! Continue reading
